Lambrusco dell’Emilia IGP

Red sparkling dry 

Grapes:Lambrusco Salamino 25%, Maestri 20%, Grasparossa 15%, Marani 10%, Oliva 8%, Barghi 5%, Foglia frastagliata 2%, Ancellotta 15%

Installation: 2011

Alcohol: 11,5% Vol

Production: 5000 btl

Vinification techniques:

- maceration on skins for 3/4 days

- non-controlled temperature

- spontaneous fermentation with indigenous yeasts

- low amount of sulphites added

- not clarified

- aging on lees at least 6 months

Organoleptic characteristics:A wine with impenetrable purplish red colour with generous foam. At the nose there are floral and fruity notes of ripe cherry, that with the aging in the bottle evolve into spicy notes and deep aromas. At the palate it is direct with fruity notes of cherry, a decided tannin and a persistent long final.

Pairings:ideal with the most traditional dishes of our local cuisine: cappelletti, cotechino and boiled meats. Serve at a temperature of 10°c.
